The original Sprucebrook Farm was purchased in 1928 by Joseph Gerber. His son Emmanuel took over the farm in 1933, raising dairy, beef and cash crops. Throughout the 1950's and 1960's Spruce Brook Farms supplied fresh chicken, and other vegetables and produce products to the local grocery store chain, known then as IGA.

Starting in the early 1930's, Joseph Gerber began transporting milk daily to the local cooperative milk plant for both Spruce Brook Farms and other farmers in the vincinity

In 1974, Emmanuel's son David took over the farm, expanding the operation to include the production of poultry and eggs. In 1994, a second farm was acquired near Newton to facilitate the production of larger scale egg and poultry production.. Thoughout a number of permutations, the transportation needs were finally met in 2004, when Spruce Brook Farms acquired a transportation company, Flash Freight Systems of Guelph, to allow the efficient flow of inputs and farm products to market.

In 2006, Spruce Brook Farms added a third property near Ariss, Ontario to facilitate the refrigerated storage requirements of produce and food for the domestic and export markets. The new property will also provide additional land of the type best utilized for the growing and production of fresh fruits and vegetables.
